Dark Chocolate Fudge Cake

Last month for Frank's birthday, I forgot to pick up a cake mix at the store the week before when we went grocery shopping, and I couldn't let his birthday pass without making him a cake (or at least some sort of special baked treat), so I got to googling and scouring pinterest for a DIY cake mix and I totally found the most perfect one. Of course I changed a few things, not only to make it my own, but also to make it better, and if it didn't turn out so amazing! So chocolatey and fudgey and I vowed to never buy another cake mix again since I have this recipe to use from now on. Here's the recipe below!

DARK CHOCOLATE FUDGE CAKE

1 3/4 cups all-purpose flour

2 teaspoons black strap molasses

1/2 cup vegetable oil

1 cup milk

2 eggs

1 teaspoon salt

1 1/2 teaspoons baking soda

1 1/2 teaspoons baking powder

1 1/2 cups dark chocolate cocoa powder

2 cups sugar

1 cup coffee


Preheat oven to 350 degrees. Prepare two 8-inch round cake pans.Whisk milk, oil, eggs, coffee and vanilla in a large bowl until well mixed and slightly frothy.Add the dry mix and whisk until just barely combined and smooth, about 50 strokes. (do not over mix)Divide between the prepared cake pans.Bake until set and slightly puffed and a toothpick inserted in the center comes out clean, 25 to 30 minutes.Let cool in the pans 5 minutes, then turn out onto a cooling rack right-side up to cool completely.
